I haven't seen these episodes before but why do they use the fast money board for the whole game?

According to sources from the Game Show Forum and from Kyle on this board, the set was made with ease of transport in mind.
I also was made aware they used just this board only for the 1994 incarnation of Family Feud. Using CGI, they televised a more classic representation of the board by overlaying the computer image over the digital board.
These pictures are great. This is the closest I've ever seen of the '94 set...which this may or may not be.
